Husband-and-wife duo Greg and Chelsea Miller launched Minneapolis-based Vittles Catering in 2016. Crafting gorgeous mouthwatering grazing platters, the company is known for its approachable culinary style. We recently caught up with Chelsea to learn the story behind Vittles, her top advice for hosting at home and more.


How did Vittles get its start?

My husband and head chef, Greg Miller, has a culinary arts degree and has been in the industry for 30 years. He started an omelet stand 12 years ago called Kabomelette (which has expanded into a breakfast food truck), a soft-serve truck and our catering company, Vittles.

Is there a story behind the name?

“Vittles” was what Greg’s mother, Rita, called dinner or supper. His father was a hog farmer, and his mother made every single meal.

How do you develop your recipes?

We love to get inspiration by looking at dishes from our favorite restaurants and cookbooks, then we craft them exactly to our liking.

What’s your top tip for cooking at home?

Create a dish based on taste; try adding a little of this and a little of that until it tastes the way you want it to. Greg tweaks every single item he prepares, even if he’s following a recipe.

What advice do you have for creating a memorable event?

No event is perfect! People will remember your energy and joy more than they will remember the food or decor. And, don’t be afraid to hire an expert.
