We didn’t think beloved Minneapolis eatery Barbette could any get better — and then proprietor Kim Bartmann added a one-of-a-kind Champagne bar. Trapeze boasts a mouthwatering menu of toasts, crudité, shellfish, seasonal vegetable creations and, of course, bubbles!

The enticing list of libations was curated Jill Mott, who brings to the table nearly 20 years of experience in the wine industry. Working alongside her to achieve fare perfection is Jessica Cak, a connoisseur of French cuisine and Barbette’s resident chef for the past six months. Together with restaurateur extraordinaire Bartmann, they have created a dining and drinking experience sure to delight.

The intimate space welcomes Champagne devotees Thursday, Friday and Saturday nights. Sunday through Wednesday, meanwhile, is set aside for private events. Whether you’re planning a festive fete or yearning for a relaxing atmosphere after a long week, Trapeze will have your fix. We spoke with the team and got the inside scoop on must-try drinks and fare.

What to Drink

• Garden Variety: Żubrówka bison grass vodka, herb syrup, green chartreuse, cucumber

Anything from the spritz menu, including:
Aperol: Aperol, Prosecco, sparkling water, lime
Cynar: Prosecco, Cynar, sparkling water, olives
Elderflower: St. Germain, Suze, dry vermouth, lemon, simple syrup, sparkling water
Sensa: Cucumber, Salers, dry vermouth, fresh lime, sea salt, sparkling water

What to Eat

• Red Table speck and sorrel with Parmesan
• Deviled quail eggs and caviar
• Tete de Moine and plum
